Opened by professionals and prepared fresh for you. Available in half-dozen, dozen and larger quantities depending on the day’s selection.
Choose from changing combinations such as salmon caviar, tobiko, wasabi tobiko, sesame seaweed, native-inspired dressings and yuzu sesame.


Species and provenance
Salinity, tides, freshwater inflows, wetlands, nutrients and farming methods all influence an oyster’s character. This expression of place is sometimes called merroir—the marine equivalent of terroir in wine.
Native Australian species
Generally smaller and slower-growing, with a firm texture and rich, lingering flavour. The same species can taste noticeably different from Wooli, Hastings River, Pambula or Albany.
Deep-cupped and plump
Typically larger, with plump flesh, clean briny flavour and a soft, creamy finish. Widely cultivated in Tasmania and South Australia, as well as Port Stephens in NSW.
Our growing regions
Our oyster bar follows the seasons and sources from growers across Australia. Availability changes regularly, but the region and species are identified wherever possible.

Grown in the clear Wooli River estuary on the NSW North Coast. The river’s ocean connection, surrounding national park and small catchment help produce a clean coastal character, firm texture and concentrated flavour.

Grown on Biripi Country around Port Macquarie, where freshwater tributaries meet tidal ocean water among mangroves, wetlands and seagrass. Often recognised for creaminess, mild brininess, minerality and lingering umami.

Grown on Biripi Country around Laurieton, where river, lake and ocean environments meet. Several harvest areas allow oysters within the system to develop different expressions of brine, creaminess and sweetness.

One of Australia’s best-known Sydney Rock regions, centred around Forster and Tuncurry. Ocean tides, freshwater catchments, seagrass and wetlands contribute salt, sweetness, creaminess and mineral character.

Both Sydney Rock and Pacific Oysters are commercially cultivated within this large estuary. Sydney Rocks offer a firmer texture and rich finish; Pacifics are generally larger, deeply cupped and cleanly briny.

Part of the wider Port Stephens provenance and closely associated with the region’s oyster industry. Because either species may be supplied, Naeco identifies the exact oyster whenever it is offered.

Grown on Dunghutti Country around the Macleay Valley and South West Rocks. Freshwater from an extensive catchment enters an estuary shaped by mangroves, tidal channels and the nearby ocean.

Grown in the Clyde River estuary as it flows through forested country to Batemans Bay. Its relatively undeveloped catchment and tidal water help create clean salinity, firm texture and a balanced mineral finish.

A highly regarded far South Coast region where freshwater and ocean tides meet in a sheltered coastal lake. The cooler environment gives its Sydney Rocks a distinctive balance of brine, sweetness and mineral flavour.

Sourced from coastal lakes and estuaries on the far NSW South Coast. Cooler water, tidal exchange and the coastal catchment give these Sydney Rocks a clean southern expression.

Grown in the sheltered waters of Moreton Bay, where ocean water mixes with freshwater moving through the island and surrounding mangroves. These native Sydney Rocks offer a distinctly subtropical expression.

Grown around Georges Bay and sheltered waters near St Helens on Tasmania’s northeast coast. Cool water and regular tidal movement help develop deep cups, plump flesh and clean, bright salinity.

A recognised southern Tasmanian region producing beautifully presented cool-water Pacifics with a deep cup, creamy texture and bright coastal flavour.
Pacific Oyster · Magallana gigas
One of Australia’s most recognised Pacific Oyster regions. Oysters grown in the Eyre Peninsula’s sheltered, highly saline bays and inlets are known for deep cups, plump flesh and clean oceanic brine.
Albany or Western Rock Oyster · Saccostrea glomerata
The same species as the Sydney Rock, but with a distinct Western Australian provenance. Grown in Oyster Harbour and Shoal Bay where nutrient-rich rivers meet cool Southern Ocean water, Albany Rocks are a highly seasonal part of our range.
